Chinese Chive Pancakes

Layered pan-fried pancakes brushed with sesame oil and packed with Chinese chives.

Ingredients

  

  • 2 cups all-purpose flour
  • ¾ teaspoons sugar
  • cup boiling water
  • 2 teaspoons salt, divided
  • ½ cup Chinese chives, minced (divided)
  • 2 teaspoons sesame oil
  • 2 tablespoons peanut or grapeseed oil, for frying

Instructions

 

  1. Pulse flour and sugar; pour in boiling water to form a smooth dough. Rest covered 1 hour.
  2. Divide into 4. Roll each thin; brush with sesame oil, sprinkle with salt and chives, roll into a rope, coil, rest, then roll flat again.
  3. Pan-fry in a little oil until golden, 1–2 minutes per side. Cut into wedges.
