A light and refreshing salsa combining cucumbers, tomatoes, chives, and dill — perfect as a dip or a topping for grilled dishes.

Ingredients

  

  • 2 cucumbers (peeled, seeded, and chopped)
  • 3 plum tomatoes (chopped)
  • ¼ cup chopped chives or green onions
  • 2 tablespoons chopped garlic chives
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon or lime juice
  • to taste pepper

Instructions

 

  1. Combine all ingredients in a mixing bowl.
  2. Chill before serving.
  3. Makes a good dressing for hummus on a pita or a topping for grilled chicken or fish.
