Lemon-Rosemary Sorbet

A refreshing herbal sorbet with lemon balm and rosemary, perfect for a hot summer day.

Ingredients

  

  • 1 ½ cups sugar
  • 1 ½ cups water
  • 6 sprigs lemon balm (5-inch long each)
  • ¼ cup fresh rosemary, roughly chopped
  • ¾ cup lemon juice
  • 1 tablespoon vodka (optional)

Instructions

 

  1. In a medium saucepan, combine sugar and water. Bring to a boil and stir until sugar is dissolved.
  2. Remove from heat, add herbs, and cover. Set aside for 30 minutes to steep.
  3. Strain mixture and discard herbs. Add lemon juice and vodka, then chill mixture for 30 minutes.
  4. Place in an ice cream maker and freeze according to manufacturer’s instructions.

Notes

The vodka improves texture but may be omitted if desired.
