Rosemary Fruit
Fresh mixed fruit marinated overnight in a spiced rosemary–juniper syrup for a bright, aromatic finish.
Instructions
-
In a small saucepan, combine sugar, water, cinnamon sticks, cloves, juniper berries, rosemary sprigs, and lemon juice. Simmer, stirring frequently, for 3 minutes or until the sugar is dissolved.
-
Remove from heat and cool completely.
-
When cool, pour over the prepared fruit in a deep bowl, stirring gently to coat. Cover and marinate overnight in the refrigerator.
-
Before serving, remove the cinnamon sticks, cloves, juniper berries, and rosemary. Garnish with fresh rosemary sprigs.
Notes
Yield: 6 servings. A combination of sectioned oranges, fresh pineapple chunks, unpeeled apple slices, pears, and pomegranate seeds works well.
