
Chinese Chive Pancakes
Layered pan-fried pancakes brushed with sesame oil and packed with Chinese chives.
Instructions

Pulse flour and sugar; pour in boiling water to form a smooth dough. Rest covered 1 hour.

Divide into 4. Roll each thin; brush with sesame oil, sprinkle with salt and chives, roll into a rope, coil, rest, then roll flat again.

Pan-fry in a little oil until golden, 1–2 minutes per side. Cut into wedges.
