Homemade vanilla extract steeped in vodka or other spirits for rich, natural flavor in baked goods and desserts.

Ingredients
  

  • 5 vanilla beans or pods
  • 1 cup 80-proof vodka (brandy, bourbon, or rum may also be used)
  • 1 8-ounce glass bottle or jar (preferably dark in color)

Instructions
 

  1. Split vanilla beans in half lengthwise and cut into smaller pieces as necessary to fit into the bottle.
  2. Add beans to the bottle and pour alcohol over the beans, ensuring they are completely covered.
  3. Steep in a cool, dark place for a minimum of 4 to 6 weeks. Shake the bottle every few days.
  4. Use as is or strain into a clean bottle with a fresh vanilla bean for gift giving.

Notes

Yields about 1 cup. Flavor intensifies over time; keep tightly sealed and stored away from heat.
