Up To Date Poppy Seed and Lemon Balm Dressing

A sweet, tangy dressing made with lemon balm, poppy seeds, and onion, perfect for fresh fruit and green salads.

Ingredients

  

  • cup white wine vinegar
  • ½ cup powdered sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • ½ cup coarsely chopped onion
  • 1 cup salad oil
  • 2 tablespoons lemon balm leaves (chopped, firmly packed)
  • 1 tablespoon poppy seed

Instructions

 

  1. Combine sugar, mustard, salt, onions, and half of the vinegar in a blender. Blend well.
  2. Gradually add oil, alternating with the remaining vinegar, and blend until a stable emulsion is formed.
  3. Add lemon balm and poppy seeds. Pulse to quickly blend.
  4. Store in a tightly covered container in the refrigerator.
  5. Serve over fresh fruit with salad greens or in a glass bowl as a sweet salad.

Notes

Yield: 1½ cups. Keep refrigerated and shake before serving. Recipe adapted from Flavour Connection, © 1980.
