Ingredients

  

  • 3 tablespoons lump tamarind ((3 oz/85 g))
  • 1 cup water

Instructions

 

  1. Break up lump tamarind and combine with 1 cup water in a saucepan.
  2. Simmer for 1 to 2 minutes, stirring often, until the tamarind is soft and mixture has thickened.
  3. Press pulp through a sieve and discard fibers and seeds.

Notes

Use tamarind pulp in sauces, marinades, and curries for a tart, fruity flavor.
