A hearty grain salad with brown rice, beans, fresh vegetables, and a lemon dressing, highlighted by fresh mint and parsley.

Ingredients

  

  • 1 ½ cups cooked brown rice
  • ½ cup sliced green onions
  • 2 ripe tomatoes, seeded and diced
  • ½ cup diced cucumber
  • 1 cup canned black beans, rinsed and drained
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • freshly ground black pepper, to taste

Instructions

 

  1. Mix all ingredients together in a large mixing bowl.
  2. Cover and chill for 2 hours or more.
  3. Serve on a bed of dark green lettuce.

Notes

Proportion of beans to rice and tomatoes was good. Tastes like tabouli—yum!
