Classic medlar jelly made from bletted medlars, apples, and lemon. Perfect for toast or desserts.

Ingredients

  

  • 3 pounds medlars, bletted
  • 1 green apple
  • ยฝ lemon
  • 3 cups sugar
  • about 2 quarts water, enough to float fruit

Instructions

 

  1. Rinse and quarter medlars and apple. Place in pot with lemon and water. Bring to boil, then simmer for 45 minutes.
  2. Strain through cheesecloth overnight without pressing.
  3. Next day, combine strained liquid with sugar. Cook until mixture reaches 220ยฐF and gels.
  4. Test by placing a spoonful on a chilled plate. If it wrinkles, it’s ready.
  5. Ladle into clean jars. Store in refrigerator up to one year.
