
Herbal Garlic Soup
A comforting, aromatic garlic soup enhanced with celery or lovage, greens, lemon, herbs, and optional chicken for added heartiness.
Ingredients
- ยผ cup chopped fresh garlic
- ยผ cup chopped celery or lovage leaves
- 2 tablespoons olive oil
- 1 teaspoon honey
- ยฝ teaspoon grated lemon peel
- 6 cups chicken or vegetable stock
- ยฝ cup cooked, shredded chicken (optional)
- ยฝ cup chopped greens (spinach, dandelion, sorrel, or Swiss chard)
- 1 teaspoon chopped fresh thyme (lemon thyme recommended)
- 1 tablespoon chopped fresh lemon balm
- 1 large egg white
- 2 tablespoons freshly grated Parmesan cheese
- 1 teaspoon calendula petals (seasonal)
Instructions

Lightly sautรฉ garlic and celery or lovage in olive oil, honey, and lemon peel until tender.

Add chicken or vegetable stock and greens (and chicken, if desired). Simmer for 15 minutes or until greens are soft.

Add thyme and lemon balm. Simmer for an additional 5 minutes.

Whisk in the egg white and immediately remove from heat.

Sprinkle with Parmesan and calendula petals before serving.
