Ingredients

  

  • 1 2½–3 pound fryer-broiler (or chicken parts)
  • 2 tablespoons olive oil
  • 1 cup yellow onion, chopped
  • 1 cup celery, sliced
  • ½ cup dry sherry or vermouth
  • 1 tablespoon fresh tarragon, chopped
  • 1/2–1 teaspoon salt
  • teaspoon freshly ground black pepper
  • 2 head garlic, cloves separated, unpeeled
  • 1 ½ tablespoon fresh basil, chopped
  • 1 lemon, juiced
  • chopped parsley (for garnish)

Instructions

 

  1. Preheat oven to 350°F. Brown chicken in oil in a heavy, lidded skillet. Add onions and celery; cook until softened.
  2. Add wine, then sprinkle in tarragon, salt, and pepper. Tuck in garlic cloves. Cover and bake ~30 minutes.
  3. Reduce oven to 300°F and continue baking 45–60 minutes, basting every 15 minutes. Add basil and lemon juice; adjust seasoning and garnish with parsley. Serve with bread, rice, or potatoes.
