Apple, Sage and Squash Bread

Two loaves of warmly spiced quick bread with squash and apples.

Ingredients

  

  • 1 ¼ cup salad oil
  • 1 cup brown sugar
  • ¾ cup white sugar
  • 4 eggs
  • 1 ¼ cup pureed butternut squash (or pumpkin)
  • 1 ½ Tbsp fresh sage, chopped
  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon freshly ground nutmeg
  • ½ teaspoon salt
  • 3 apples (Fuji or Gala), peeled and chopped
  • ½ cup raisins

Instructions

 

  1. Preheat oven to 350°F. Grease and flour two 9-inch loaf pans.
  2. Cream oil and sugars with eggs; blend in squash puree and sage.
  3. Sift together dry ingredients; stir gradually into wet mixture. Fold in apples and raisins. Divide into pans and bake 50–60 minutes. Cool in pans 10 minutes, then turn out and cool completely.
