Ingredients
1 ¼cupsalad oil
1cupbrown sugar
¾cupwhite sugar
4eggs
1 ¼cuppureed butternut squash (or pumpkin)
1 ½Tbspfresh sage, chopped
1cupall-purpose flour
1cupwhole-wheat flour
2teaspoonsbaking soda
1teaspoonground cinnamon
½teaspoonground cloves
½teaspoonfreshly ground nutmeg
½teaspoonsalt
3apples (Fuji or Gala), peeled and chopped
½cupraisins
Instructions
Preheat oven to 350°F. Grease and flour two 9-inch loaf pans.
Cream oil and sugars with eggs; blend in squash puree and sage.
Sift together dry ingredients; stir gradually into wet mixture. Fold in apples and raisins. Divide into pans and bake 50–60 minutes. Cool in pans 10 minutes, then turn out and cool completely.
