Wild Strawberry Ginger Jam

A fragrant, fruity jam blending the sweetness of wild strawberries with spicy crystallized ginger and aromatic lemon thyme.

Ingredients

  

  • 2 cups crushed wild strawberries (use small, sweet domestic strawberries if wild are not available)
  • 2 tablespoons crystallized ginger (cut into small pieces)
  • 2 teaspoons fresh lemon thyme
  • 3 ยฝ cups sugar
  • ยฝ pouch liquid pectin

Instructions

 

  1. Prepare home canning jars and lids according to manufacturerโ€™s instructions.
  2. Combine strawberries and ginger in a large saucepan. Add sugar, stirring to dissolve.
  3. Bring to a rolling boil over medium-high heat, stirring constantly.
  4. Stir in thyme, then stir in liquid pectin. Boil hard for 1 minute. Remove from heat.
  5. Skim foam if necessary. Ladle hot jam into hot jars, leaving 1/4 inch headspace. Wipe jar rims clean, adjust caps, and process 10 minutes in a boiling-water canner.
  6. Remove jars from canner and allow to sit for 1 hour. Check seals and store in a dark place. Refrigerate any unsealed jars.
