Pineapple Mint Mojito

A classic mojito with pineapple mint, lime, rum, and club soda—muddled to release the mint’s essential oils and served icy cold.

Ingredients

  

  • 10 fresh pineapple mint leaves
  • ½ lime (cut into 4 wedges)
  • 2 tablespoons white sugar (or to taste)
  • 1 cup ice cubes
  • 1 ½ fluid ounces white rum
  • ½ cup club soda

Instructions

 

  1. Place mint leaves and one lime wedge in a sturdy 12-ounce glass. Muddle to crush the mint and release essential oils and lime juice.
  2. Add two more lime wedges and sugar; muddle again. Do not strain.
  3. Fill the glass almost to the top with ice. Add rum and top with club soda. Stir and adjust sugar to taste.
  4. Garnish with the remaining lime wedge and a sprig of pineapple mint.
