Bright juniper-lime highball built on a house juniper syrup, finished with tonic water and lime slices.

Ingredients

  

  • 1 cup superfine sugar
  • 2 ounces fresh lime juice
  • 8 ounces tonic water
  • thinly sliced lime rounds, for garnish

Instructions

 

  1. In a small saucepan, combine sugar, 1 cup water, and juniper berries. Simmer gently for 20 minutes. Let stand uncovered for 4 hours. Strain to make juniper syrup.
  2. In a cocktail shaker, combine lime juice and juniper syrup. Pour into ice-filled highball glasses. Top with tonic water. Serve, garnishing with lime slices.

Notes

Yields 4 cocktails.
