Chicken with Lime and Spices

Zesty chicken marinated in lime, coriander, cumin, turmeric, and mint; quick sauté.

Ingredients

  

  • 4 boneless chicken breasts, sliced
  • 2 tablespoons olive oil
Marinade
  • 3 tablespoons fresh lime juice
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon turmeric
  • 1 tablespoon fresh mint, chopped

Instructions

 

  1. Toss chicken with lime juice, coriander, cumin, turmeric, mint, salt, and pepper. Marinate several hours or overnight.
  2. Heat oil in a skillet over medium-high. Sauté chicken 5–10 minutes until browned and just cooked through.
