Caramelized Black Pepper Chicken

Sweet–salty Vietnamese-style chicken with rich caramel, black pepper, and a chile kick.

Ingredients
  

  • ½ cup dark brown sugar
  • ¼ cup fish sauce (to taste)
  • ¼ cup water
  • 3 tablespoons rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon finely grated fresh ginger
  • 1 teaspoon coarsely ground black pepper
  • 2 Thai chiles, halved (or dried red chiles)
  • 1 tablespoon canola oil
  • 1 shallot, thinly sliced
  • 1 lb boneless skinless chicken thighs, 1-inch pieces
  • 4 sprig cilantro, for garnish

Instructions
 

  1. Whisk sugar, fish sauce, water, vinegar, garlic, ginger, pepper, and chiles.
  2. Sauté shallot in oil until softened (~4 min). Add chicken and sauce; simmer on high ~10 min until cooked and glossy.
  3. Garnish with cilantro; serve with jasmine rice.
