
Apple, Sage and Squash Bread
Two loaves of warmly spiced quick bread with squash and apples.
Ingredients
- 1 ¼ cup salad oil
- 1 cup brown sugar
- ¾ cup white sugar
- 4 eggs
- 1 ¼ cup pureed butternut squash (or pumpkin)
- 1 ½ Tbsp fresh sage, chopped
- 1 cup all-purpose flour
- 1 cup whole-wheat flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon freshly ground nutmeg
- ½ teaspoon salt
- 3 apples (Fuji or Gala), peeled and chopped
- ½ cup raisins
Instructions

Preheat oven to 350°F. Grease and flour two 9-inch loaf pans.

Cream oil and sugars with eggs; blend in squash puree and sage.

Sift together dry ingredients; stir gradually into wet mixture. Fold in apples and raisins. Divide into pans and bake 50–60 minutes. Cool in pans 10 minutes, then turn out and cool completely.
