Raspberry Jell-O layered with a creamy, tangy filling made with cream cheese and a touch of horseradish, finished with a second gelatin layer.
SERVINGS: 8 servings
RECIPE CATEGORY: Salads

Ingredients

  • 2 8-ounce packages raspberry-flavored Jell-O
  • 1 pound raspberries (fresh or 1 bag frozen)
  • 8 ounces cream cheese (softened)
  • 1 tablespoon horseradish (more or less to taste)
  • cup mayonnaise or salad dressing

Instructions

  1. Prepare 1 package of raspberry Jell-O according to package directions. Pour into a 9×13-inch dish and add raspberries. Refrigerate until set.
  2. Bring cream cheese to room temperature. Mix in horseradish and mayonnaise until smooth. Spread evenly over the chilled Jell-O layer. Refrigerate to firm.
  3. Prepare the second package of Jell-O. Pour gently over the filling (pour over the back of a spoon to avoid disturbing the filling). Refrigerate until set. Cut into squares and serve.
