Jamaican-style jerk paste—chilies, onion, allspice, thyme, and warm spices—rubbed onto pork chops and grilled hot and fast.

Ingredients
  

  • ¼ cup chopped onion
  • 1 teaspoon dried thyme, crumbled
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon cayenne
  • ½ teaspoon ground allspice
  • teaspoon freshly grated nutmeg
  • teaspoon ground cinnamon
  • 2 pieces rib pork chops, ½-inch thick (about 4 ounces each)

Instructions
 

  1. Prepare grill for medium-high heat.
  2. Mince and mash onion to a coarse paste with thyme, sugar, salt, black pepper, cayenne, allspice, nutmeg, and cinnamon.
  3. Pat pork chops dry and rub all over with jerk paste.
  4. Grill on an oiled rack 5–6 inches over coals for about 4 minutes per side, or until just cooked through.
