Sweet-tart cranberry chutney with apples, raisins, vinegar, fresh ginger, and curry—delicious on poultry, pork, or sandwiches.

Ingredients

  

  • 2 cups water
  • 2 cups sugar
  • 2 tablespoons molasses
  • 2 large Granny Smith apples, sliced and diced
  • 12 ounces fresh cranberries
  • 1 cup raisins
  • cup red wine vinegar
  • 2 tablespoons fresh gingerroot, finely minced
  • 2 teaspoons hot curry powder
  • 1 teaspoon salt
  • teaspoon Tabasco sauce

Instructions

 

  1. Bring water and sugar to a boil in a heavy saucepan. Simmer until sugar dissolves.
  2. Add molasses and apples. Bring back to a boil, then reduce heat and simmer 10 minutes until apples are tender.
  3. Add cranberries, raisins, vinegar, ginger, curry powder, salt, and Tabasco. Stir to combine.
  4. Return to a boil. Simmer 20 minutes, stirring occasionally, until thickened. Store in covered jars in the refrigerator.
  5. Note: Keeps up to a year under refrigeration.
