Bright and zesty cilantro pesto that works perfectly for pasta, sandwiches, or to freeze for later.
SERVINGS: 1 cup (approx.)

Ingredients
  

  • 4 cups cilantro (whole leaves, packed)
  • ½ cup extra virgin olive oil
  • cup fresh grated Parmesan cheese
  • cup pine nuts
  • 2 cloves garlic
  • 1 juice of one lemon
  • ¼ teaspoon salt or more, to taste

Instructions
 

  1. Place all ingredients in a food processor. Process until smooth. Makes about 1 cup. Enjoy fresh or freeze for later use.
