A versatile simple syrup infused with lemon basil—great in drinks and desserts.

Ingredients
  

  • 1 ½ cup water
  • 1 ½ cup sugar
  • 8–10 sprigs lemon basil (or other basil)

Instructions
 

  1. Bring water and sugar to a boil.
  2. Bruise basil; add to pan. Remove from heat, cover, and steep at least 30 minutes.
  3. Strain, pressing leaves. Cool and refrigerate (6–8 weeks) or freeze.
