Basil Pineapple Cooler

A tropical cooler of orange and pineapple juices infused with fresh basil.

Ingredients

  

  • 6 cups fresh or reconstituted frozen orange juice
  • 1 46-ouonce can pineapple juice
  • 1/4–1/2 cup sugar (to taste)
  • 2–3 tablespoons fresh lemon juice (optional)
  • fresh basil branches (cinnamon, clove, lemon, sweet Thai and/or sweet), no woody stems

Instructions

 

  1. Combine juices and sugar in a non-reactive container; stir to dissolve. Add lemon juice if desired.
  2. Lightly bruise basil; add to container to fill. Cover and refrigerate at least 8 hours or overnight.
  3. Strain, pressing basil; adjust sweetness. Serve over ice (optional: puree with ice or add soda for fizz).
