
Caramelized Black Pepper Chicken
Sweet–salty Vietnamese-style chicken with rich caramel, black pepper, and a chile kick.
Ingredients
- ½ cup dark brown sugar
- ¼ cup fish sauce (to taste)
- ¼ cup water
- 3 tablespoons rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon finely grated fresh ginger
- 1 teaspoon coarsely ground black pepper
- 2 Thai chiles, halved (or dried red chiles)
- 1 tablespoon canola oil
- 1 shallot, thinly sliced
- 1 lb boneless skinless chicken thighs, 1-inch pieces
- 4 sprig cilantro, for garnish
Instructions

Whisk sugar, fish sauce, water, vinegar, garlic, ginger, pepper, and chiles.

Sauté shallot in oil until softened (~4 min). Add chicken and sauce; simmer on high ~10 min until cooked and glossy.

Garnish with cilantro; serve with jasmine rice.
