Fresh mixed fruit marinated overnight in a spiced rosemary–juniper syrup for a bright, aromatic finish.

Ingredients

  

  • 1 cup sugar
  • ½ cup water
  • 3 sticks cinnamon
  • 5 whole cloves
  • 3 whole juniper berries
  • 3 sprigs fresh rosemary
  • 2 tablespoons fresh lemon juice
  • 3 cups fresh fruit (see notes for suggestions)

Instructions

 

  1. In a small saucepan, combine sugar, water, cinnamon sticks, cloves, juniper berries, rosemary sprigs, and lemon juice. Simmer, stirring frequently, for 3 minutes or until the sugar is dissolved.
  2. Remove from heat and cool completely.
  3. When cool, pour over the prepared fruit in a deep bowl, stirring gently to coat. Cover and marinate overnight in the refrigerator.
  4. Before serving, remove the cinnamon sticks, cloves, juniper berries, and rosemary. Garnish with fresh rosemary sprigs.

Notes

Yield: 6 servings. A combination of sectioned oranges, fresh pineapple chunks, unpeeled apple slices, pears, and pomegranate seeds works well.
