Bread Machine Lemon Herb Bread
Citrus-scented sandwich bread made in a bread machine, bright with lemon zest and lemony herbs.

Ingredients

evaporated skim milk

tablespoons
safflower oil (or other vegetable oil)

teaspoon
sea salt
1
tablespoon
fresh lemon juice
(zest the lemon first)

large eggs, lightly beaten
3 ⅔
cups
unbleached all-purpose flour

tablespoons
sugar
3-5
leaves
'Mabel Grey' scented pelargonium, chopped (or similar lemony herbs)

zest of 1 lemon
2 ¼
teaspoons
active dry yeast (1 packet)
Instructions
Measure ingredients in the order listed into bread machine pan with paddle attached.
Select “sweet” (or “basic”) cycle and light crust setting. Do not use delay timer.
Start machine; remove bread promptly when finished and cool before slicing.
Notes
Other lemony herbs (lemon balm, lemon basil, lemon thyme) may be substituted; reduce dried herbs by half.
