White Chili

Ingredients

  • 2 medium onions, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon ground cumin
  • 1 Tbsp fresh oregano, chopped
  • ½ cup cilantro, chopped
  • 1 15-ounce can garbanzo beans
  • 1 15-ounce can cannellini beans
  • 1 15-ounce can white shoepeg corn
  • 2 chicken breasts, cooked and diced
  • 2 cubes chicken bouillon
  • 2 cans green chiles, undrained
  • 1 cup Monterey Jack cheese, shredded

Instructions

  • Combine all ingredients in a greased casserole and bake for 1½ hours. Serve with additional Monterey Jack cheese.
