Lemon Balm Tea
A soothing tea blend of lemon balm, orange mint, lemon zest, and spices — perfect for wintertime pick-me-up.

Ingredients

cup
dried lemon balm leaves, firmly packed and broken into small pieces
¼
cup
dried orange mint leaves, firmly packed
1
tablespoon
dried lemon zest
1
teaspoon
whole allspice berries, lightly bruised

tablespoons
dried calendula or chamomile flowers, firmly packed
Instructions
Combine all ingredients. Store unused tea blend in a tightly sealed container in a dark, cool place.
To serve: Steep 1 heaping teaspoon of tea blend per cup of boiling water in a warm teapot for 5 minutes. Strain and serve with honey or sugar.
If using fresh herbs, double the quantity of herbs but do not increase lemon zest or allspice.
Notes
Yield: Approximately 15 cups of tea.
